It was 2:30 a.m. Friday, and I had a case of insomnia.
The house was a mess, there was a baptism meeting 10.5 hours later in our living room, and while Allicia and I are saving our money and "skipping" gifts for our two-year-anniversary of our first date, I had to do something nice for her.
So I decided to clean, with my thoughts being that I could stay up until 5 a.m. so that she didn't have to lift a finger (staying up until 5 a.m. was also good practice for baby Lucy's arrival in a month). While cleaning the kitchen, I opened the refrigerator and found some chicken that I had set in there to dethaw Wednesday night. Realizing that I needed to use it before it went bad, my eyes turned to my crockpot. I was already awake decluttering the house, why not add to my productity by getting Saturday's lunch ready?
Here's what I created: Insomniac's Chicken Pasta Stew. I wish I had a better photo, but it was the best my iPhone could give me. Enjoy.
1 pound uncooked Chicken breast, cut into bite-size pieces
1 10.5 ounce can of Cream of Chicken
1 10.5 ounce can of water
1 Cup of baby carrots, chopped.
3 green onions, washed and chopped.
Garlic and Italian Seasoning to taste (I shook powdered garlic and italian seasoning over the mixture for 5 seconds each, but this is something that I'll let you decide on)
12 ounces of Vegetable Radiatore pasta (we used the Trader Joe's brand)
1. Add vegetables to bottom of crockpot, season with spices.
2. Add chicken pieces.
3. Add cream of chicken, water.
4. Set crockpot to low, cover and heat for six to seven hours.
5. Turn crockpot off after six to seven hours, or place on the keep warm setting.
6. When ready to eat, cook the pasta according to the manufacturer's instructions.
7. Put the pasta on your place, and top with the chicken stew.
8. Pray, then eat!
Alterations: We didn't have any potatoes, and I didn't feel like running to the store to get them at 2:30 a.m., but they would be a welcome addition in place of pasta noodles. Just turn the crockpot up to high and add them to the crockpot during the last 30 minutes. In place of green onions, half a cup of diced red onions. In place of italian seasoning, try sage and thyme. To spice things up, add black and red pepper to the veggies before cooking. And by all means, dump some tabasco sauce on the meal.
